Thin pancakes-pellicles (in Ukrainian - Na ls Niki), in which a variety of fillings are wrapped - sweet and salty, very popular in Ukraine and Belarus. Every home cook has his own recipe, of course. The dough in my recipe turns out to be very thin and at the same time quite elastic. As a result, the leaves are very elegant and delicate. My version is traditional - with cottage cheese and raisins.

Ingredients:

For pancakes:

Flour - 1 cup
Milk - 2 cups
Water - 1 cup
Salt - 1/2 teaspoon
Sugar - 2 tbsp. Spoons
Soda - 1/4 teaspoon
Eggs - 2 pcs. Large or 3 pcs. Averages
Butter - 30 g

Vegetable oil for frying - literally 2-3 tbsp. SpoonsFor filling:

Cottage cheese 9% - 800 g
Sour cream - 2 tbsp. Spoons
Sugar powder - 2/3 cup
Raisins - 1/2 cup
Lemon peel - 1 teaspoon
Vanilla
How many grams are there in the cup?

Cooking method:

In a bowl, grind the eggs with salt and sugar.
Melt butter in a microwave.

In the flour add salt and gradually, while stirring, pour in the milk. Add eggs and water, stir well. You can rinse the dough with a blender for reliability.

Lastly, pour the melted butter into the dough and leave it for half an hour.

Frying pan, grease with vegetable oil with a culinary brush. Pour the dough in a small ladle, so that it is distributed in a frying pan not too thick.

Fry the policies on one side and spread on a dish.

Raisins pour boiling water, drain after 5 minutes.

For a stuffing, it is good to pound cottage cheese, powdered sugar, and sour cream. If the cottage cheese is too granular - you can kill with a blender.

Add vanilla and lemon zest, raisins.

On the toasted side of each pancake spread one and a half - two tablespoons of filling and wrap. Outside, there should be a non-baked, bright side.

In this form, the pellicle can be folded into the food container, removed as needed and fried before serving in a small amount of vegetable oil.

Details:

Water makes the dough elastic, soda is docile, and the time before frying is necessary so that gluten develops well in the dough and the pancakes are easily roasted and made the right way.

In Israel, they sell cottage cheese, where on the packet it is written: "for filling". This can be used without mixing it with sour cream.
